Power Up: Simple Kale Coconut Lime Raspberry Smoothie
This is a fresh, zesty, and gut loving smoothie I like to have post a workout. It’s Keto friendly, yet still plant-based and full of phytonutrients and antioxidants. If you count your macros, feel free to add more coconut milk if you need more more fat for the day or if you need less substituting almond milk or even just simple water works well here as well. The type of protein powder you use, if flavored, will have an effect on the overall flavor. I like to use either a non-flavored collagen or I’ve found a plant-based vanilla compliments the raspberries, lime, and coconut flavors. Try it on your own and see what you think.
INGREDIENTS
100 g Kale
1 cup raspberries
Juice of 1 lime
2 tablespoons unsweetened shredded coconut flakes
2 tablespoons flax seeds
1 serving protein powder (I like to vary between a plant-based and a collagen based)
50 ml Ayam coconut milk (The blue box. doesn’t have carrageenan added! Many of the canned are good choices and have limited ingredients such as just coconut and water. Check the ingredients and try to avoid added sugars and fillers.)
INSTRUCTIONS
1. Blend the ingredients with water & ice to consistency desired. Enjoy!
