Gluten Free Granola Bar
1 cup cashews
1/2 cup almonds
1/2 cup walnuts
3/4 cup unsweetened shredded coconut
1/2 cup cacao nibs
1 tsp vanilla extract
1 tsp cinnamon & 1 tsp cacao powder
1/2 tsp sea salt -
1/2 cup raw honey
Chop, dice, or food process the nuts. Mix all of the dry ingredients together. Then, combine the mixture with the honey and vanilla extract.
Spread the mixture into a pan and bake in the oven at 350 degrees for 20 minutes.
Let it cool before cutting into bars.
For about 20 bars, the macros are 3g protein, 9g fat, and 9g net carbs
If you want to reduce the net carbs a bit, sub half cup almonds or walnuts for half of the cashews and reduce the amount of raw honey. For added protein, add a bit of collagen.
