Grainless Granola Bar - Gluten Free, Keto-friendly, Paleo, Whole 30

Gluten Free Granola Bar

  • 1 cup cashews⁠

  • 1/2 cup almonds⁠

  • 1/2 cup walnuts⁠

  • 3/4 cup unsweetened shredded coconut⁠

  • 1/2 cup cacao nibs⁠

  • 1 tsp vanilla extract⁠

  • 1 tsp cinnamon & 1 tsp cacao powder⁠

  • 1/2 tsp sea salt ⁠ -

  • 1/2 cup raw honey⁠ ⁠

  • Chop, dice, or food process the nuts. Mix all of the dry ingredients together. Then, combine the mixture with the honey and vanilla extract.

  • Spread the mixture into a pan and bake in the oven at 350 degrees for 20 minutes.

  • Let it cool before cutting into bars.⁠ ⁠

  • For about 20 bars, the macros are 3g protein, 9g fat, and 9g net carbs⁠ ⁠

  • If you want to reduce the net carbs a bit, sub half cup almonds or walnuts for half of the cashews and reduce the amount of raw honey. ⁠ ⁠For added protein, add a bit of collagen.
