Blueberry Flax Muffin: Keto, Paleo, & Gluten-free

 ½ teaspoon coconut oil or ghee ⁣

 1 egg

⁣ 2 tablespoons ground flax seed

 ½ teaspoon baking powder ⁣

 1 packet stevia ⁣

 ¼ teaspoon cinnamon ⁣

 1 pinch sea salt

 ¼ cup blueberries ⁣

 1 tablespoon chopped pecans or nuts of choice

 2 teaspoon butter, ghee, or coconut oil⁣⁣⁣

This recipe, with the macros, is for one LARGE muffin or several small. Whichever you prefer. It's quite a filling 300 calories. I prefer to break them down into a few and pair with a few egg whites for a bit more protein. ⁣⁣
