Blueberry Flax Muffin: Keto, Paleo, & Gluten-free
½ teaspoon coconut oil or ghee
1 egg
2 tablespoons ground flax seed
½ teaspoon baking powder
1 packet stevia
¼ teaspoon cinnamon
1 pinch sea salt
¼ cup blueberries
1 tablespoon chopped pecans or nuts of choice
2 teaspoon butter, ghee, or coconut oil
This recipe, with the macros, is for one LARGE muffin or several small. Whichever you prefer. It's quite a filling 300 calories. I prefer to break them down into a few and pair with a few egg whites for a bit more protein.
